Production of cyclodextrin glycosyltransferase (CGTase) is influenced by the reaction of the CGTase-producing strain towards various types of substrates. Variations in environmental factors such as concentrations of carbon and nitrogen sources possess significant effects on CGTase production. production of CGTase, different parameters such as incubation periods (0-72 h), medium pH (9, 9.5, 10, 10.5, 11 and 11.5) and temperature (28ºC, 32ºC, 37ºC, 42ºC, 47ºC and 52ºC) were used.
